World Famous Pico De Gallo
Pico de gallo is the key to any authentic Mexican meal. This recipe packs a punch with the freshest ingredients that are sure to spark your taste buds!
All you need for this recipe is 6 plum tomatoes, 1 small onion, 1/2 cup fresh cilantro, 1-2 jalapeno peppers, 3 tablespoons lime juice (about 1 lime), 1 garlic clove minced, and 1/4 teaspoon salt.
Start by chopping the tomatoes and scooping out the pulp. Then, chop onion, jalapeno, and cilantro. Add it all together in a bowl, and top with the lime juice, garlic, and a handful of salt. Stir it all up, let it sit for an hour+, and there you go!
Simple Fish Tacos
Tacos are a staple, and these fish tacos take the concept to a whole new level. All you need for the tacos are 1-1/2 lbs. fresh tilapia fillets, 1/4 cup all-purpose flour, 1 packet taco seasoning, salt and pepper, 2 tablespoons canola oil, and corn tortillas. To make the slaw topping, you will need 8 ounces coleslaw mix or shredded cabbage, 2 tablespoons light mayonnaise, 2 tablespoons light sour cream, 1/2 a lime, 1 tablespoon honey, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Start by mixing the slaw ingredients together to form your topping. Then, coat the tilapia in a mixture of flour, taco seasoning, and salt and pepper. Add it to a medium heat pan on the stove and cook until both sides are brown. Toast the tortillas on both side, either on the pan or in the oven for 10 minutes. Tacos, assemble! Start with a tortilla, then add tilapia, then add slaw!
