Sweet And Sour Lemon Bars

Ingredients

  • 1 Cup of Fresh Lemon Juice
  • 3 Cups of All-Purpose Flour, divided
  • 8 Large Eggs at room temperature
  • 2/3 Cup of Powdered Sugar
  • 3 Cups of Sugar
  • 1/2 Teaspoon of Salt
  • 3 Tablespoons of Lemons Zest
  • 12 Tablespoons of Melted Unsalted Butter

Directions

Step 1: Preheat oven to 350°F.

Step 2: Line a 9×13 baking dish with parchment paper. NOTE: Lining the baking dish makes removing the bars from the pan easier. If you don’t have parchment paper, you can use aluminum foil.

Step 3: In a large bowl, mix 1/2 teaspoon of salt, 2/3 cup of powdered sugar, and 2 1/2 cups of all-purpose flour. Then pour 12 tablespoons of melted unsalted butter and mix until combined into a dough texture. NOTE: If you’d like to add a dash of vanilla, mix it in when you add the butter.

Step 4: Add the dough into a lined baking dish, pressing with your hands or spoon into a flat layer.

Step 5: Place into the oven to bake for 20 minutes or until it has a light golden color.

Step 6: While the crust bakes, grab a food processor and combine the zest of three lemons and 3 cups of sugar, and pulse until well combined, creating a light yellow color. NOTE: If you don’t have a food processor, you can whisk minced lemon zest and sugar in a bowl.

Step 7: Mix a 1/2 cup of sugar into the mixture. Then pour in 1 cup of fresh lemon juice and eight large eggs.

Step 8: Once the crust is done baking, remove it from the oven, and pour the lemon filling onto it before placing it back in the oven for 25 minutes. NOTE: You should turn the dish halfway through baking.

Step 9: Remove the bars from the oven and let them cool for an hour before placing them in the refrigerator for two hours.

Step 10: After the bars have been chilled, dust them with powdered sugar and cut them into squares using a clean, sharp, damp knife. NOTE: You should clean and re-wet the blade after each cut.
