Garlicky Mashed Cauliflower

This tasty mashed cauliflower is super easy to make and makes a great addition to your table or substitute for mashed potatoes. You’ll roast a large head of cauliflower with olive oil and salt until it’s fork-tender – about 45 minutes. Meanwhile, heat olive oil or butter in a small skillet and saute onion until it’s nearly translucent, then add several minced cloves of garlic, salt, and pepper and cook for just a minute or so until the onion is done and the garlic is fragrant. Add the skillet mix and cauliflower to a food processor with more butter and half-n-half and puree it, adding cream as needed.
